Ingredients
  

  • - 2 ½ cups cake flour
  • - 2 ½ teaspoons baking powder
  • - ½ teaspoon salt
  • - 1 cup unsalted butter softened
  • - 2 cups granulated sugar
  • - 4 large egg whites
  • - 1 cup whole milk
  • - ½ cup maraschino cherry juice
  • - ¾ cup finely chopped maraschino cherries
  • - 2 teaspoons vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease two 9-inch cake pans.
  • In a medium bowl, whisk together the cake flour, baking powder, and salt.
  • Using a mixer, beat the softened butter and granulated sugar until light and fluffy.
  • Add the egg whites one at a time, mixing after each addition.
  • Alternately add the milk, cherry juice, and the dry flour mixture, mixing until well combined.
  • Gently fold in the chopped maraschino cherries and vanilla extract.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Notes

- To prevent the cherries from sinking, toss them lightly in flour before adding them to the batter.
- For a richer flavor, you can substitute part of the milk with maraschino cherry juice.
